I don't know about you but this salmon and rice recipe was all over my Instagram feed and my TikTok FYP. While I wondered how to use an ice cube and wax paper, I discovered the South Asian version. I knew I had to try it.
Ingredients:
two steaks of Salmon (skin or no skin)
1 cup basmati Rice pre-soaked and boiled
1 medium onion - sliced
3- 4 garlic cloves - chopped
a handful of coriander - chopped
1 tsp Garlic paste
1 tbsp olive oil
Spices needed to marinate the Salmon:
1 tsp paprika
1/3 tsp cumin powder
1/3 tsp turmeric powder
1/3 tsp garlic paste
Salt to taste
1 tsp olive oil
Steps:
Apply all the spices to the salmon and run them in. Set aside for 10 minutes.
Meanwhile boil rice and set it aside and let it cool.
Add oil to a shallow pan, fry one side of Salmon. After 10 mins flip it and let the other side cook as well.
In another pan, add sliced onion and fry them until translucent.
Then add chopped garlic, stir fry to 2 - 3 minutes.
Add boiled rice and stir it for another 5 minutes.
Add coriander and mix well. Stir fry for another 2 minutes.
Plate the cooked rice.
Place the salmon steak on top of it.
Drizzle siracha sauce and coriander chutney.

Add half a slice of cucumber and half a wedge of lime.
